And he is head down just baking for a few more weeks until he is ready to makes his grand entrance in this world (after Grandma Joan gets in town we hope).

Jackson's Room

We finished up Jackson's room this past weekend. So now we are officially all ready for the little guy to make his debut in a few weeks!

And because we still love Lucy here is a picture of Lucy after her day at the vet.

And Lucy thinking the tag on a gift said Lucy and not Jack.
She sure will have a rude awaking in a few weeks!

Bais Family Belly Size

Lyndsey - 41 inches
Justin - 41 inches
Lucy - 20.5 inches

Now the question is how is it that a 19 lb dog has a stomach size that is half the size of 6 ft 3 in man, and a 24 week pregnant women?

Sloppy Buffalo Joes

This is a good recipe. I am not a fan of normal sloppy joes, but this version was really good.

Sloppy Buffalo Joes

2 tablespoons extra-virgin olive oil
2 pounds ground chicken
1 carrot, peeled and chopped or grated
2 stalks celery, chopped
1 yellow onion, finely chopped
2 to 3 cloves garlic, finely chopped or grated
Salt and freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1/4 to 1/3 cup hot sauce (recommended: Frank's Red Hot)
1 cup tomato sauce
1 cup chicken stock
8 good quality burger rolls, split and toasted
1 cup blue cheese crumbles
2 large dill pickles, chopped

Heat a large skillet with extra-virgin olive oil over medium-high heat. Add meat and break it up with wooden spoon, cook 5 to 6 minutes. Add in carrots, celery, onions and garlic, season with salt and freshly ground black pepper, cook 7 to 8 minutes more. In a bowl combine the vinegar, sugar, Worcestershire, hot sauce, tomato sauce and stock. Pour into the pan and stir to combine. Simmer a few minutes more. Pile sloppy Buffalo filling onto buns and top with blue cheese and chopped pickles.

Don't add to much blue cheese to the top, Justin did and he said that it overpowered everything.

My Crazy Dog

So... I was about to leave for work today and I was looking for Lucy to put her in her cage. Well I couldn't find the dog anywhere, not even under the bed (her favorite place to sleep). So I look for about five minutes and couldn't find her so I am start to get worried. I can hear her in the bedroom but can't find her, so I check back under the bed no Lucy that I can see. Well I discover that my crazy dog has pulled a piece of the fabric off the underside of the box spring and climbed into the springs. And she has managed to get her self stuck on the opposite end of the bed in the springs and is crying to get out. So I become frantic and have to rip the fabric off the other end and try to pry her out of the box springs. After about five minutes I finally get  her out.

My question is why on earth would a dog do this? Needless to say she is not allowed in the bedroom until Justin gets home and can staple up the lining again.
